According to some sources (like the Washington Post) Americans will consume an average 6000 calories today in connection with the Superbowl. It’s no surprise really, since this is the holiday that is celebrated primarily with snack foods. I’m all about a little splurge, but it’s easy to argue that we may have taken this one a little too far. Here are five yummy salads to give you a break from all those snacks!
We’ll start with this Farro Chickpea Salad. Full of health grains, yummy chickpeas, and tart pomegranate seeds, this salad makes a perfect workday lunch!

You should probably already be serving this one today…it’s healthy, delicious, and travels well, so it’s perfect for a potluck. The crisp cabbage and juicy oranges will make you forget all about those chips and dip!
I love the crunch of both the apples and fennel in this one. Totally delicious and refreshing. Easy to make, and uses ingredients that can be bought a few days in advance.

Ok, not technically a salad, but more than technically delicious and definitely worthy of a spot on your post-superbowl roster. These lettuce wraps are the perfect combination of salty, sweet, sour, and crunch and make a great lunch or snack!
