Ok, today is a pretty exciting day. First of all, I made you this yummy Orange Pecan Baked French Toast. Not only is this recipe totally delicious, it’s easier than pie. (What’s with that expression by the way? Easy as pie? Do we mean moderately easy? Easy as long as you keep the butter cold and don’t over work the dough? What are we actually trying to say here?) This is easier than pie. It’s easier than cookies. It might even be easier than scrambled eggs. The best part about this orange pecan baked french toast? It can be prepared the night before and baked off in the morning. Here’s how it usually goes at my house–
Late Friday afternoon, while overwhelmed by the joy of the coming weekend: invite friends for Sunday brunch.
Late Saturday night: Look up from the latest episode of Jane the Virgin on Hulu long enough to question own sanity and lack of organization as I wrack my brain for something that I can prepare for said brunch without having to go to the store or exert any extra energy.
Later Saturday night: Resolve to never be so hasty with invitations again as I throw together this baked french toast.
Ten minutes later: Go back to catching up on a few of my favorite shows on Hulu.
Sunday Morning: Drag self out of bed and turn on oven. Pour self a cup of tea, read the news. Put french toast into oven, drag self to shower. Take french toast out of oven, cut up some fruit, put on some coffee, and greet guests with a smile. 🙂
Second best thing about this Orange Pecan Baked French Toast? It is perfect for a potluck. If you’re going somewhere with an oven, you can easily reheat it for a few minutes once you arrive. If not, bake it in one of these beautiful pyrex casserole dishes that come with an insulated carrier. (These are seriously amazing! If you don’t have one, hop on over to Amazon and get one asap!)
Third best thing? This Orange Pecan Baked French Toast can be divvied up into individual servings, wrapped in plastic wrap and frozen in a ziplock bag to be enjoyed later. All you have to do is microwave each individual serving for about a minute and thirty seconds!
